The newly opened Füm in Atlanta brings a fresh perspective to Italian dining. The name ‘Füm’ originates from an Italo-Gaelic term meaning ‘smoke’, which hints at the restaurant’s innovative approach. The design of Füm is a collaborative effort involving Arcturis | Square Feet Studio, Grassfed Culture Hospitality, and HAND Studio. The restaurant draws inspiration from a lively Italian piazza, as described by Rachel Uhelski, an interior designer and project manager at Square Feet Studio. She explains, “The design mimics a vast open space where various activities converge, fostering a sense of community.”

The restaurant’s layout is designed to mimic the feel of an open market, inviting patrons to move freely and explore the culinary offerings. The interior includes unique features such as a pasta maker’s room, a wine station, and a special area for dry-aged meats. Unconventionally, there is also a DJ booth, infusing modern vibes into the traditional setting and ensuring that a variety of music keeps the atmosphere vibrant in the 150-seat dining area. At the heart of Füm is a wood-fired open hearth, accompanied by a show kitchen where executive chef Sebastián Vargas showcases his culinary artistry with dishes like cavatelli and trout.

Artistic Design and Ambience

The interior design of Füm is marked by artistic touches that enhance its aesthetic appeal. Overhead, sculptural plaster forms a curved soffit and envelops columns, softening the architectural lines. The walls are treated with a hand-finished limewash, adding subtle texture that complements the detailed millwork. Elements of blackened metal, crafted by local artisans, add a nod to traditional craftsmanship, all while brass accents provide a contrast with their bright sheen.

The cocktail bar at Füm is not only functional but also a visually striking feature. It boasts a polished Ceppo Rosso marble top, embedded with pebble fragments reminiscent of Italy’s renowned mosaics. The color scheme of the restaurant draws from natural, farm-to-table colors with paprika-toned ceiling insets illuminated by cove lighting. This warm red shade is echoed in the wall behind the kitchen and in the upholstery of the banquettes and bar stools. Adding to the palette, a coffee bar features shelving and tiles in a sophisticated pistachio green, complementing the rich walnut wood furnishings.

Füm is designed to be an immersive experience, according to Uhelski. As guests move through the space, they engage with a venue that appeals to all senses, transforming a simple meal into an extraordinary event.
