Mistake #1 is trying to fake it. Almost all attempts to make a healthy version of an inherently unhealthy food are going to disappoint for 1 reason : expectations. If my eyes see a taco or a burger, my tastebuds expect a taco or a burger, not something that merely apes a taco or a burger. Fake meat of any form is almost always awful because – guess what – it’s not meat !
Rather, healthy fast food should feel free to break with the fast food norms and be itself. Examples include, but certainly aren’t limited to:
Korean kim-bap
Healthy wraps/burritos
Humus
Fruit/veggie smoothies
