Enforcement? In DeKalb County? HA!

You must not have been paying attention to local news in the past year or else you would know that several longtime employees in the Watershed Management Department tasked with inspecting how restaurants dispose of FOGs were fired for stealing money and skipping the inspections. One emloyee was arrested and plead guilty.

But, hey, it's just incomptence, theft, and bribery which is par for the course in DeKalb County government. Plus, DeKalb has a terrible problem with maintaining things. The water and sewer system is but one example of management without a clue supervising employees without a clue.

One thing not covered in that story was enforcement. Restaurants and other non-residential kitchens are the major contributor to FOG proglem. If an establishment doesn't clean out their grease trap regularly (in some cases it may need to be done daily), that grease just gets washed down the drain and clogs up the main. Is there anyone in Dekalb going around tracking the origins of the FOG deposits and fining those not in compliance? It doesn't sound like there is or that there are enough. Maintenance has to be done, but commercial kitchens shouldn't be making the job harder than it already is.
